People have been asking me lately for some vegan family meal ideas so I thought I'd write a quick little blog and share some with you! :)
1. Pasta dinner
So, this can be as easy as cooking up some noodles. I like to use whole wheat or something other than just the plain noodles however, if I am feeling the money pinch I'll go for the plain old noodles. My kids are loving 'Parmageddon' ( vegan parmesan made with pumpkin seeds & more ) by Vegan Magic. I add some extra nutritional yeast ( for a b12 boost ) and a little daiya cheese. My kids like raw veggies so I just cut them up a bunch of vegetables and put them on a side plate with some hummus. I saute some veggies, garlic and tomato sauce for my husband and I and add them to our pasta. So, it can be very simple or a little more complicated depending on what you like on your pasta.
This is another one that could be as simple as buying some vegan wraps. I opt for whole wheat with wraps as well. Cooking up some rice and beans , mixing in some spices and garlic and adding in some guac. There are just so many options here and again, my kids like their meals simple. I put their veggies on the side and I usually load up mine and my husbands with lots of veggies . Really the options are endless here.
3. Stir Fry
We like tofu in this house so with the stir fry, I usually saute tofu, celery, broccoli , carrots and zucchini with some brags. Cook some rice, put the veggie mixture on top and everyone loves it. Again, with my kids I just put their veggie mixture on a separate plate and their rice in a bowl on it's own. You can also swap the rice out for any kind of rice noodles. If I have more time I'll make a warm peanut sauce to go on top which my kids gobble up as well. Warm peanut curry sauce is amazing too!!
Here is another one that you can really do quickly if you are short on time or spend more time and make your own dough . I usually don't have time to do that so I like to buy naan bread from the supermarket. Not all Naan is vegan so some other options are puffy pita bread and pre-made pizza dough. I would say a majority of these are vegan. I buy some sauce and cut up veggies and make everyone their own pizza and it really just takes about 15 min to prepare and 15 min to cook. Super easy
Yes, vegans do eat salad. However, the photos of memes making fun of the "salad" that vegans eat couldn't be more wrong. Those are meat eater salads baby!! Vegan salads are in a world of their own. They are big, they are filling and they are delicious. I could write a novel about vegan salads but, that is not going to happen today so I will just say this. If you think salad is boring, you have not lived.
6. Soups and Stews
You could probably make about 1,000,000 different vegan soup and stew variations. My kids will eat them all. Make them flavorful with some vegan broth and lots of lentils. Whatever you like . I give myself a little pat on the back when I watch my kids chow down on homemade soups and stews full of goodness.
7. Smoothies + anything
When my kids are being super picky or I don't feel like cooking anything. I make them huge green smoothies , usually with spinach, frozen bananas, almond butter, ground flax and a pinch of cinnamon. Make it thick like a milkshake. You don't need a fancy blender to do that. I used to have a 2 dollar blender from the thrift store that worked well for years. It fills them up and then I usually just make something super simple to go a long with it. Whole wheat toast? Grilled cheese? tofu scram? crackers and a dip? I could go on forever
